This beautifully and lively north African inspired one-pot roast features a medley of veg, fruit and seeds. It’s jazzed up with sprinkle of Ras EL Hanout and served with a versatile Middle Eastern grain called Freaked. 

Ras el Hanout is a classic Moroccan spice mixture that’s a great addition to your pantry. And as a quick fun fact, the name means ‘top of the shop’, which reflects its expensive ingredients. Freekeh has a wonderful smoky / nutty flavour and is chock-full of protein, and best of all… a pocket-friendly price.

How to make it

Roast the medley

Place all the ingredients from step 1 on a large roasting tray. Sprinkle over the crushed garlic and Ras EL Hanout. Drizzle with the olive oil, and toss everything together with your hands. Roast in the oven for 30-40 minutes. Roast until the vegetables are tender enough to pierce with a fork. You need to see some charred bits on the edges Remove from the oven and set aside.
