Quick Goodness Frittata

When you’re tired, not in the mood or simply can’t face another ‘i’m staving’ moan, this quick and straightforward (15min), Goodness Frittata recipe is the one for you.

This recipe is a great base to build on. Add whatever tickles your kids’ current fancies: ham, or leftover chicken, add a few spinach leaves, a few tomatoes, a bit of feta or make it half and a half.! (i.e. your half, kids half.)

Eggs are amazing. One of the most nutritious foods on the planet, these little powerhouses are an excellent source of inexpensive, high-quality protein, and loads of minerals and good fats. Try to buy organic or at the very least good quality free range varieties.

Ingredients


MAKES: 2 and a bit

TIME: 5 min hands-on / 10 min cook

AGE: 8-9 months upwards

Step 1
dash
olive oil
1/2
red onion, finely chopped
large handful
frozen peas
handful
broccoli florets
handful
asparagus, chopped
4
eggs, whisked
Step 2
handful
cheddar cheese, grated

How to make it

TURN UP THE HEAT

Turn the grill on high

MIX IT UP

In a frying pan add a little oil over a low/medium heat.
Add the onions and veg.
Cover the pan with a lid or foil; this steams the veg.
Cook for 5 min.
Add the eggs.
A grind of pepper.
Cook for few minutes until the base is set.

handful asparagus
4 eggs

SPRINKLE & SERVE

Sprinkle with grated cheese
Place under the grill for 5 minutes
Serve.
