This simple, pre-prepared breakfast is named after my little girl’s breakfast antics.

Oats soaked overnight in nut milk, then served with creamy yogurt, nut butter, banana and cocoa nibs.

Soaking oats (or grains in general) makes them easier to digest and promotes great belly bacteria!

This recipe takes just a few minutes to prep in the morning, giving you more time to monkey around.

Oats contain slow carbohydrates, protein, and essential fatty acids. They’re an excellent prebiotic, as the oats feed the good bacteria and help maintain a healthy gut flora.

peanut nut butter, or more if you fancy*
2 tbsp
natural yogurt**

small banana, sliced
sprinkle
cacao nibs
sprinkle
cinnamon
NOTES

* Feel free to use any type of nut butter.

** If you want the happy gut benefits from the probiotics, choose a yogurt that contains live, active cultures, and full fat. Light or reduced fat varieties tend to be more refined and contain more added sugar.

How to make it

THE NIGHT BEFORE

To make the oats (and more than 1 serving) take a medium, clean 1/2 litre / 500ml Kilmer jar and add 1/part oats, to 3/parts nut milk.
It makes more than you think you need, so you have a few days worth to play with - it keeps in the fridge for 4 days if airtight.
Give it a good stir and allow to soak for at least 6 hours or overnight.

STACK THE MONKEY

Layer the oats followed by the yoghurt mixed with the nut butter.
Add the banana then top off with a sprinkle of cacao nibs and cinnamon.
It keeps well in the fridge for up to 2 days.

If you want hot cheeky monkey, microwave the oats on high for up to 1 minute before stacking in the yoghurt and nut butter.
