The weekender is a bit of indulgence without the indulging.

One balanced smoothie with probiotics, water, veg, and fruit, with the right amount of sweetness.

Cardamon, it’s slightly spicy, herbal and citrusy character balances perfectly with berries and the earthy texture of beetroot and kale. It’s a bit of a faff to make, so knock it up at the weekend.

Adding veg with fruit in smoothies not only enhances the nutrient absorption, it reduces the natural sugar content, than if it were all fruit based, so it won't lead to blood sugar spikes and helps with your good tummy bacteria.

Ingredients


SERVES: 2 adults & 2 children

TIME: 10 min / 9 min hands-on > quick blend

AGE: 8 months +

STEP 1
200ml
coconut water
100g
fresh or frozen blueberries
50g
frozen blackberries
50g
frozen raspberries
1/2
beetroot, peeled and roughly chopped (50g)
2
cardamom pods, inner seeds crushed (outer shells removed)
1/4
lemon juiced
1/2 tsp
anilla bean paste
small handful
kale, purple if you have it (20g)
STEP 2
200g
plain or coconut yoghurt
a few
fresh blueberries, blackberries and raspberries
sprinkle
cacao and toasted coconut flakes

How to make it

BLEND

Add all ingredients from step 1 into a high speed blender and mix until really smooth.

TO FINISH

Pour some of the smoothie mixture into a glass, followed by a large dollop of yoghurt and top with more smoothie.

Stir in the yoghurt around the edge of the glass to create a swirl effect.
Top with some fresh berries and sprinkle over some cacao and toasted coconut flakes.
You can always make extra from step 1, bottle up and keep in the fridge for up to 4 days.
