The White Pineapple

“What colour smoothie would you like this morning?” If I ask my daughter to choose a flavour, she’ll uhhhmmm and ahhh until the cows come home.

But the colour thing works, then one morning she asked for “errr, a white one”. A bit of a curveball, but it got me thinking of a white pineapple, which turned out pretty well.

Pineapples contain an excellent array of vits and mins including calcium and offers an unusually high source of Vit C, far higher than oranges in fact.

Ingredients


2 adults & 1 child

TIME: 5 min / 4 min hands-on > quick blend

AGE: 8 months +

STEP 1
300ml
coconut water or cashew milk*
150g
frozen or fresh pineapple
50g
natural plain yoghurt
small handful
coconut flakes
small handful
sunflower seeds
1/2 tsp
vanilla bean paste
sprinkle
seeds, cinnamon and cocoa (optional)
NOTES
-
*Choose a nut milk brand that’s fortified, and low in sugar. Plain milk or coconut water also works fine.

How to make it

BLEND AWAY

Add all the ingredients to a high-speed blender and mix until smooth.
Taste and adjust the flavour with extra coconut for creaminess, or vanilla bean paste for sweetness.

FINISH

Top with a handful of seeds and a sprinkle of cinnamon and cocoa powder (optional).
Add the mini pineapple top for fun, very optional fun!
Pour into a glass, bottle up and keep in the fridge for up to 3 days.
